Guacamole Burgers
Summer BBQs got you down with all the delicious rotten food they offer that sabotages your healthy lifestyle? Well have I got a burger for you! Whip these up for your next summer bash and even die-hard meat eaters will look your way. Black bean burgers and guacamole so good you'll be able to easily pass on the dead animals being scraped off the grill. Pair these with Mike's American Apple Pie Salad and you've got a party!
Guacamole Black Bean Burgers
(Adapted from Dr. Fuhrman's Simple Bean Burgers in Eat to Live)
I put my own spin on this recipe using ingredients I already had on hand.
Serves 6
Ingredients for Burgers:
2 C Prepared Black Beans
1/2 C Minced Onion (I used red)
2 T Ground Flaxseed
2 T Dijon Mustard
1 T Rolled Oats
1/2 t Chili Powder
1/2 t Cumin
6 Large Lettuce or Cabbage Leaves
Ingredients for Guac:
1 Deliciously Ripe Avocado
1 Medium Tomato
1/4 Red Onion
Directions: Heat oven to 350. Mash beans with large fork or potato masher. Stir in all remaining ingredients. Form into 6 patties. Line a baking sheet with parchment paper (this eliminates the need for oil) and place patties on sheet. Bake for 25 minutes. Gently flip patties and bake for 10 minutes more. Patties should get crispy on outside and remain moist on inside.
While burgers bake, prepare guacamole. Scoop the flesh out of the avocado and mash. Stir in chopped tomato and onions.
Wrap up a burger with a generous scoop of guac in a lettuce leaf and devour!
