Recipe Share: Shaved Brussels Sprouts

Never liked sprouts, but this recipe changed that.  I can eat a giant helping of sprouts prepared this way.  This is very simple and quick - only time consuming part is slicing the sprouts.  Just double the recipe to a BBQ or dinner party.

Shaved Brussel Sprouts - Eat to Live approved

3+ Tablespoons water
1 1/2 lbs Brussel Sprouts trimmed and sliced thin
2 Shallots peeled and minced
3 Garlic cloves peeled and minced
3/4 Tablespoon FRESH thyme chopped
1/4 Cup Water
1 Tablespoon Lemon Juice

Water saute the brussel sprouts in a skillet on high adding small amounts of water while cooking until sprouts are tender - 6-7 minutes.


Add shallots, garlic, and thyme to brown the shallots a bit - 2-3 minutes.


Add 1/4 Cup water to quick steam uncovered - 1 minute.


Remove from heat.


Add lemon juice and serve.


This is a modified recipe that originally used olive oil to saute the sprouts, but the water saute method gives a much fresher, healthier result.  


Water sauteing is simply to saute without the use of oils or fats.  Heat your skillet on high so that the water sputters when it touches the pan.  Add a little water as you continue to cook to avoid from burning the vegetables.  In Eat to Live, Dr. Furhman mentions that you might also try some other healthy alternatives to oil when sauteing such as wine, fruit juice, veggie broth witout salt, or coconut water.
