Smoothies: 3 for 1!

Please accept this post as my redemption from last night's cake show and tell. If you or I are going to indulge in sweet vegan treats, we had better follow that sugar bomb up with some stellar meals overflowing with nutrients. After my birthday I went into detox mode and started taking smoothies seriously. Huh? It's a smoothie...why so serious? Well, anybody can throw some sweet fruit and juice into a blender and be happy with the results. Tastes great and has all the fiber and nutrients from whole fruit. Done? Not quite. There are many ways to turn that fruit smoothie into a super smoothie. Enter: leafy greens! Oh yes, now we're talking! Let's get bigger pay off from our smoothies shall we? Leafy greens do a body good! 

If you've read Eat to Live you know the crazy benefits that greens can offer...weight loss (without even trying!) for one. Disease proofing your body and boosting up your immunity for another. With those undeniable benefits, who wouldn't want to turn their smoothies green? Here are three smoothie recipes that I have been enjoying. My advice to green smoothie newbies: try the smoothies in the order they are shown below. I listed the recipes in order of green intensity. While all 3 are 100% delicious, the green flavor will intensify as you go down the list. Be brave! I really think ALL of you will love the flavor and feel great knowing you are improving your health with a simple smoothie.


I am one lucky gal with a new Vitamix which makes preparing these smoothies a snap. You can still successfully make these smoothies in a normal blender, they may just take a little longer to get smooth. For all recipes (and whether using a Vitamix or not), add ingredients to blender in the order listed in each recipe then blend until smooth.

I solemnly swear, you will not taste the spinach.
Chocolate PB Smoothie
An indulgent treat. Barry and I love this for breakfast on the weekend. It's quite filling.
Serves 2
Ingredients:
1 C Unsweetened Almond Milk
2 T (heaping) 100% Natural Peanut Butter (salt free)
2 T (heaping) Unsweetened Cacao or Cocoa Powder
1 Generous Handful of Baby Spinach
2 Frozen Bananas
A slightly more adventurous tropical delight!
Pineapple Kale Apple Smoothie
My weekday morning breakfast. Throw in the blender, pour in a to-go cup and sip on the commute.
Serves 1
Ingredients:
1/2 Large Apple, roughly sliced
1 C Chopped Kale (Vitamix: ok to include thick stems; traditional blender: may want to remove stems)
1 C Frozen Pineapple Chunks
1 t Ground Flaxseed
1 C Water

This smoothie means business! 
Apple Carrot Kale Smoothie
The overall flavor reminds me of a mild apple cider. We enjoyed this for dinner one night. Try it!
Serves 2
5 Small - Medium Whole Carrots, scrubbed and chopped
1 C Water
1 C Chopped Kale, packed firm (Stems ok in Vitamix; May have to remove for traditional blender)
1 Small Apple
1 T Fresh Lemon Juice
1 T Ground Flaxseed

  1. Nice looking smoothies! Have you ever tried Dr Fuhrmans healthy chocolate cake? It's one of my favorites for birthdays and holidays and is generally a crowd pleaser even among non nutritarians.
