Chipotle Black Bean Soup
This soup has such great flavor with a spicy kick. I've eaten it by the bowl full and also poured over home-baked tortilla chips for some delish nachos. The chipotle chilies add a level of flavor you will not want to miss...so try not to omit them! I found mine at Whole Foods and Mike has found them at local grocery stores.
Chipotle Black Bean Soup
Ingredients:
2 Cans Low-sodium Black Beans, drained and rinsed
4 C Low-sodium Veggie Stock
2 C Chopped Tomatoes
2 Bunches of Green Onions, roughly chopped
1 Bunch of Cilantro, roughly chopped
3 Dried Chipotle Chilies, stems removed
Juice and Zest of 1 Lime
2 t Cumin
2 t Garlic Powder
Pepper to taste
Directions:
Reserve a 1/2 C of black beans. Place all other ingredients in blender and blend until smooth. Transfer soup to pot and stir in reserved black beans. Simmer soup on low for about 20 minutes.
I highly recommend serving this soup with a nice dollop of Mike's Creamy Chipotle Dressing!
