Nutritarian Pumpkin Oat Bars
You might notice a theme here with pumpkin. The reality of it all is I bought a can of organic pureed pumpkin and I needed to use it up before it spoiled.
Here is a recipe for Pumpkin Oat Bars I adapted from Dr. Fuhrman's Eat to Live - Yummy Banana Oat Bars.
Nutritarian Pumpkin Oat Bars
3 1/2 Cups Rolled Oats
2 Ripe Bananas
1/2 Cup Pumpkin Puree
1/4 Cup Unsweetened Applesauce
3/4 Cup Chopped Walnuts
3/4 Cup Rasins
3 Teaspoons Pumpkin Pie Spice
-Preheat oven to 350F
-Mash bananas in large bow
-Mix in the rest until ingredients are equally distributed
-Flatten mixture into a 9 x 9 baking dish.
-Bake for 40-50 minutes
-Loosen sides with a knife and let stand over night to cool
I brought these into the office today. They were gone shortly there after. Not only are they a moist, hardy fall treat, they are healthy and taste great.
