Red Lentil Thai Chili
Incredible recipe adapted from the Post Punk Kitchen to be Eat to Live - www.theppk.com
Water saute in large pot until tender:
1 large onion, chopped
1 red pepper, chopped
3 gloves garlic, minced
Add:
2 Tablespoons chili powder
Cook 1 minute
Add:
4 Cups Water
1 Cup Lentils
1.5 lbs Sweet Potatoes, cubed
Cover and simmer 20 minutes or until lentils are tender
Add:
1 can light coconut milk
1/2 Cup Fresh Cilantro, chopped
2 Tablespoons Thai Curry Paste
28 oz of diced tomatoes no salt added
2 (15oz) Cans of Kidney Beans (rinsed and drained)
Bring to boil, then simmer for 30 minutes.

You weren´t lying! I have tried several variations, adding different vegetables. My favorite is adding kale at the end so that they wilt slightly. Thanks for the recipe!! -Sæunn
