Least favorite foods: broccoli, cauliflower, eggplant, mushrooms


I am into the 140's now floating around 147lbs with a size 30-31 waist.  I am probably at or around my ideal body weight.  I presume that I will maintain this weight effortlessly.  With the addition of some moderate to heavy exercise, I will probably have to consume a ton more vegetables in order to ensure that I have enough nutrients.


I wonder how long before spell checkers begin recognizing the word nutritarian?

So, some of my friends and family started Eat to Live.  Most are on their first few days or first couple weeks.  I hope they are experiencing the kind of detox that I went through - headaches, hungry, irritable, and very irregular.  More than that I hope they stick it out to see how far they can go.  Even in the toughest of it all, the knowledge I gleaned from Eat to Live kept me inspired to continue eating healthy.  Yeah, I have splurged every once in a while.  But my body retaliated hours later.

Learning to cook the first week or so was difficult.  I was lucky to do it when I was on vacation.  But now that I am in the swing of things, I only cook once a week and have my meals ready in under 5 minutes.  NOBODY can complain that they don't have enough time to cook on this diet.  The FEVE has an awesome garden salad that I just use hummus for dressing if I don't feel like cooking.

It is inspiring that so many people around me have just read Eat to Live and have taken on the six week challenge.  Having a network of people interested in learning how to eat healthy makes it easier for me to continue to make good choices.  More than that though, I have been thinking about the impact that Eat to Live is having on many people's lives including my own.

Eat to Live has overhauled how I look, feel, act, and ultimately live.  God, I just read that and realized I sound like YAZ commercial.  But it is all true.

Maybe I am morbid, but I have considered what it would have been like has I not started eating to live, had I not decided to commit to the six week challenge.  I would have broken into the 200 lbs mark well before my thirties.  I could have been one of the many that died early from an unexpected heart attack.  Or spent the later part of my life battling some form cancer.  What if I didn't live to be 50 because I wanted/needed an apple fritter?  I do love apple fritters.

Do you have a close friend that you are worried about?  Fat?  Tired?  High blood pressure?  Several medications?  Acid reflux?  Cancer?  Heart disease?  I am at a point now where I feel a strange sense of guilt if I don't at least mention eat to live to people that need help.  It could be that simple gesture that could completely change a persons life for the better.

All seriousness aside - I ate an entire pan of the Yummy Banana Oat Bars from Eat to Live recipes right the day I baked them.  They are delicious.  I manipulated them a bit.  I added pumpkin instead of applesauce and threw in some allspice, nutmeg, cinnamon, and cloves.  With the shredded coconut and raisins, I think it turned out pretty well.  I brought them into the office to see how they would go over and they were gone in minutes.  When you have baked goods that contain no salt, oil, sugar, flour, or fat and still taste great, it doesn't take much for people to dig in.  AND nobody feels guilty about it.  I love it.
